Williams refrigeration repairs across Perth
Williams is an Australian maker of commercial refrigeration, and its equipment is spread through Perth kitchens, pubs, bakeries and cafes. You can usually spot it by the range names, which are borrowed from gems and native plants: Pearl, Garnet, Opal, Emerald, Jade, Boronia, Banksia, Cameo and Topaz. When one of those units stops holding temperature, Sam Celesti can be on site the same day to find out why.
Sam has more than 20 years in commercial refrigeration and holds ARCtick licence AU55592, which covers the refrigerant work that many Williams faults eventually need. He repairs every major brand, and he does the work himself, with no subcontractors and a fixed price agreed before he starts.
Williams ranges Sam works on

The Williams catalogue runs to 185 listings, and most of them turn up in Perth sooner or later. Uprights include the Pearl and Quartz Star reach-ins, Garnet cabinets and Ruby roll-in fridges that take GN trolleys, plus a dedicated meat ageing refrigerator. Behind the bar there are Boronia and Cameo back bar fridges, bottle coolers, glass chillers and M Series multidecks with night blinds. Kitchens run Opal and Emerald counters, Banksia, Jade and Thermowell prep units, and compact Amber, Aztra and Vari Temp cabinets.
Front of house, Williams makes cake, sushi, ice cream and jewellery box display showcases, wine displays, beverage coolers and Crystal and Garnet bakery cabinets, and the Topaz range covers 24 cafe models from compact under-counter fridges to cake and food displays. On top of that come blast chillers, from reach in blast chiller freezers rated from 10 kg to 50 kg up to roll in chillers rated at 320 kg.
Remote Williams systems need a different approach
A good share of the Williams range is built as remote equipment. Thirty listings are remote versions, including Opal Remote and Emerald Remote counters, Boronia Remote and Cameo Remote back bar fridges, remote glass chillers and remote front of house counters. In a remote setup the cabinet holds the evaporator, while the compressor and condenser sit in a plant room, on a roof or in a courtyard, connected by copper pipework that can run a long way.

That means a warm remote counter can have its fault in three places: the cabinet, the pipe run between them or the condensing unit outside. Sam works through all three. He checks the expansion valve and evaporator fan at the cabinet, looks for oil stains and corrosion along the line, and tests pressures, the condenser and the compressor at the other end. Leaks are found and repaired before any regas, because topping up a leaking system only buys a few weeks.
Blast chillers and specialist cabinets
A Williams blast chiller is judged on how fast it brings cooked food down through the danger zone. When cycles start running long, the usual suspects are a condenser choked with kitchen grease, a slow fan, a torn door seal letting warm air in, or a food probe that no longer reads true. Sam checks each one, then runs a cycle and compares the pull down against what the kitchen needs for its batch sizes.
Specialist cabinets such as the meat ageing refrigerator, sushi showcases and wine displays have tighter targets for temperature, humidity or both, so a small drift matters more than it would in a storage fridge. Sam sets and checks the controller against a calibrated probe so the cabinet holds the conditions the product needs.
Servicing Williams equipment before it breaks

Underbench counters and back bar fridges take a beating from knees, trolleys and busy hands, so gaskets, hinges and door closers wear faster than on an upright in a storeroom. A torn gasket lets warm, moist air in, which builds frost, works the compressor harder and lifts the power bill. A routine service picks that up along with dirty coils, tired fans and blocked drains. Sites with several units can book them through our commercial refrigeration maintenance visits.
