Fridge repairs for Northbridge kitchens, grocers and bars
Sam Celesti fixes commercial fridges and freezers for Northbridge restaurants, Asian grocers, takeaways and bars, about 1 km from the Perth CBD. That covers underbench and prep fridges, saladettes, glass-door drinks fridges, back-bar bottle fridges, and upright and chest freezers. He has over 20 years in commercial refrigeration and an ARCtick licence (AU55592), does the work himself, and puts a fixed quote in front of you first.
The thing that sets Northbridge apart for smaller refrigeration is the cooking. Few suburbs pack this many wok burners, charcoal grills and deep fryers into a few blocks, and every fridge nearby lives in that air.
Heat and grease: the Northbridge fridge killer
A self-contained commercial fridge cools its contents by pumping heat out through a condenser coil, usually behind a grille at the bottom or back of the cabinet. It needs cool, clean air to do that. Next to a wok range it gets the opposite.
- Grease films the condenser coil. Airborne oil from woks and fryers sticks to the fins, then flour and dust stick to the oil. Within months the coil is matted shut.
- Radiant heat bakes the cabinet. An underbench fridge directly beside a burner sits in air far hotter than the room. The compressor runs almost nonstop and the door gasket hardens and cracks.
- The condenser fan motor seizes. Sticky grease drags on the fan until the motor overheats and stops, and then the compressor follows.
- Thermal overload trips. Staff notice a fridge that "keeps turning itself off". It is the compressor protecting itself from heat it cannot shed.
Korean barbecue and hotpot restaurants add another layer, because table grills put grease into the dining room as well as the kitchen. Display and drinks fridges out front can clog just as fast as the ones behind the pass.
A quick check anyone can do: shine a torch through the grille at the bottom of the fridge. If you cannot see metal fins through the fluff and grease, the condenser is blocked and the fridge is working far harder than it should.

Chinatown grocers and their freezers
The Asian supermarkets and grocers around Roe Street, James Street and William Street run a different set of equipment: rows of glass-door drinks fridges, upright freezers and chest freezers holding frozen dumplings, buns, seafood and imported ice creams. Shoppers lift lids and open doors all day, and stock gets piled above the load line to fit a delivery in.
The faults that follow are heavy frost build-up, worn lid and door seals, iced evaporators in uprights, and failed thermostats that let a freezer drift up without anyone noticing until product softens. Sam repairs these freezers on site, checks they pull back down under a full load, and can advise on spacing so they are not breathing each other's exhaust heat in a crowded aisle.
Back-bar fridges on the bar strip
The bars along William Street and James Street rely on back-bar bottle fridges, often several side by side under the bar top. Common calls are glass-door fridges fogging and icing after a busy night, failed fans, cracked door hinges and controllers that have drifted out of calibration. Sam works on Skope and other major brands, along with the Carel and Danfoss controllers and Tecumseh compressors inside them. What to do when a fridge goes warm mid-service
- Clear the grille. Pull away boxes, mop buckets or bags of rice stacked against the bottom of the cabinet so it can breathe.
- Check the stock temperature, not just the display. A probe thermometer in a container of sauce or meat tells you more than the controller.
- Sort by risk and time. Under FSANZ guidance, potentially hazardous food should stay at 5°C or colder. Under 2 hours above that it can be chilled again, 2 to 4 hours means cook or serve it now, and 4 hours or longer means it is discarded.
Kitchens near heavy cooking lines benefit most from routine refrigeration servicing, because a regular coil clean prevents most of the faults above. For everything else, Sam provides commercial fridge and freezer repairs throughout Perth.
