Three makers, one Perth supplier
Arcus Australia is a Perth refrigeration supplier that stocks equipment from several makers. This page lists 27 food displays from its range: 14 by Woodson, 12 by Cossiga and one cold food display sold under the Arcus name. Sam Celesti is independent of Arcus. He supplies, installs and services these displays, and he can price any of them.
Woodson cold food displays
Every Woodson unit here is built around 1/1 gastronorm pans, the standard 530 by 325 mm size most commercial kitchens already own, and holds 3, 4, 5 or 6 of them. Four glass styles are listed. Curved, straight and self serve glass each come in all four sizes, and square glass comes in the 3 and 4 pan sizes. Curved glass shows food off on a cafe counter, straight and square glass sit neatly in a joinery run, and self serve suits a grab and go line where customers help themselves. Count the pans you fill on a busy lunch, then add one for a rotating special.
Cossiga displays, refrigerated and ambient
Cossiga displays are listed as series, so each comes in more than one size. Those sizes are not on these listings, so use Full specs or ask Sam. Of the 12 series, 7 are refrigerated and 5 are ambient. Ambient means no refrigeration at all: the cabinet keeps food covered and on show at room temperature, which suits bread, pastries, biscuits and whole fruit, but never sandwiches, cream cakes or anything else that must stay at 5 °C or below.
- Counter series. Displays for the top of a counter, in curved or square glass, with two ambient, two refrigerated and one compact refrigerated version.
- Dimension series. Floor standing cabinets in square or curved glass, each in a refrigerated and an ambient version.
- Tower series. Free standing square displays, one refrigerated and one ambient.
- Linier series. A refrigerated food well for a servery counter.
Because most styles come as a matching pair, you can run a chilled cabinet beside an ambient one and keep the counter looking like one fit-out.
Arcus cold food display
The ACFD is the one unit here made under the Arcus name. Its listing carries no size, so check Full specs or ask Sam for the details before you decide.
Before you order
- Load it cold. A refrigerated display holds food at temperature; it is not built to cool it down. Chill food in a fridge or blast chiller first, then put it on show.
- Sun and heat. A glass cabinet facing a west window or a hot doorway works far harder through a Perth summer. Keep it out of direct sun and away from ovens and coffee machines.
- Airflow. Leave the vents clear so the unit can breathe. Joinery that boxes a display in without ventilation is a common reason they struggle.
- Power and access. Check there is a suitable power point close by, and that the cabinet fits through every door on the way in.
Installation and servicing
Sam delivers the display, places and levels it, sets the controller, and checks it holds temperature with the lights on and food loaded before he leaves. If an old cabinet needs to go, ask Sam. Units can also be sent by courier when you have your own installer.
Once it is running, Sam services and repairs these displays, from fogged glass and failing fans to cabinets that will not hold 5 °C. He charges $75 + GST to attend and $180 + GST an hour plus parts, and agrees the repair price with you first.
