Two makers in one list
All 33 cases on this page come from the Arcus range, but Arcus did not build them. Thirty two are made by Kaplanlar, and one island freezer case is made by Hussmann. Sam Celesti works independently of Arcus: he supplies these cases to Perth stores, installs them and keeps them running afterwards.
Matching the case to the job
Multidecks and vertical cases
Nine tall cases are built to line a wall. The Bibury comes as an open deck chiller, a chiller with doors and a freezer with doors. The Ivy is a chilled vertical display, and the Pearl and Pearl Sky are vertical cases, the Sky version with doors. The Svea and Svea Combi are listed as vertical display freezers, and the Svea Sky is a vertical case with wide look doors. Open decks are quicker to shop; doors hold temperature better and trim running costs.
Semi vertical cases
Five lower cases suit the middle of a store or a shorter wall: the open Opal, the Opal PL, the Opal LB with doors, the Opal Sushi and the Thermedon. A lower case keeps sight lines open across the floor.
Serve over and deli counters
Staffed counters have six serve over pieces to choose from: the Beril, the Citrine 900 fish display, the curved Citrine CG, the square Citrine SQ, the Citrine ST with built in storage and the Volendam combi counter. Citrine is a whole family, with ten pieces in this list including a patisserie case, a grab and go display, a double well self serve counter and a tower cake display.
Islands, wells and cake displays
The Kaplanlar Ladoga and the Hussmann case are both island freezers. The Isumi and Jasper SQ are well islands, the Lindau is a low height island counter and the Liv is a cold well cabinet. For bakeries and cafes, the Linz, Citrine PAT and Citrine Tower are designed to show off cakes and pastries.
Two heated pieces
The Citrine bain marie and Citrine hot plate keep food hot rather than cold. They sit in the Citrine family so a deli line can match hot and cold.
Questions to settle before ordering
Arcus lists few technical details for these cases, so the cards above show the maker and model only. Use "Full specs" for what Arcus does publish, and ask Sam for the rest.
- Plug-in or remote. Some display cases carry their own refrigeration and plug into the wall. Others connect to a condensing unit or rack away from the sales floor. A remote case needs pipework, a home for the plant and more install time, so confirm the version.
- Heat in the store. A self-contained case releases its heat into the shop, and a row of them can overload the air conditioning on a Perth summer afternoon.
- Overnight losses. Open cases spill cold air all night. Night blinds or doors cut that waste.
- Layout and access. Measure the aisles, the delivery door and the route to each position, and leave room to clean behind and under every case.
- Food safety. Chilled lines must stay at 5 °C or below, so never stack product past the load line marked in the case.
Installation and ongoing service
Sam delivers each case, positions and levels it, connects drains where needed and commissions it, then confirms it is holding temperature before any stock goes in. Ask Sam about removing old cases on the same visit. Cases can also travel by courier if you have your own installer.
Once installed, Sam services and repairs display cases himself, with no subcontractors. Attendance is $75 + GST and labour $180 + GST an hour plus parts, with the repair price agreed before he starts.
