One range for the whole cafe
Topaz is the Williams range made for cafes, and it covers both sides of the counter: cake and food cabinets out front, and undercounter, compact and upright units behind. There are 24 models in five groups, so most cafe fitouts can be done from this one range.
Topaz cake and food displays
Eight models in two heights, each in 900, 1200, 1500 and 1800 mm widths. The HTG models are 680 mm deep and 1200 mm high with three shelves, which keeps the cabinet low enough to serve across. The HTGH models are 800 mm deep and 1380 mm high with four shelves, so the same width shows a third more shelf space. Choose the width to suit the counter run, then the height by how much stock you need on show at the morning rush.
Undercounter and compact units
The nine undercounter models are all 850 mm high and 670 or 680 mm deep, in three lengths: 1300 mm (255 or 260 L), 1764 or 1765 mm (384 or 410 L) and 2230 mm (500 L). Shelves go from four on the shortest to eight on the longest. They keep milk, cold drinks and sandwich fillings close to the coffee machine and the prep bench. The four Topaz Compact models share one 600 by 610 by 803 mm body with 120 L and two shelves, for a gap where a full undercounter will not go.
Uprights and the Topaz Display
For back of house stock, the T1SSHC holds 475 L at 702 mm wide and the T2SSHC holds 895 L at 1210 mm wide, both 1950 mm high. The Topaz Display HTB2GBHC is an 800 L upright, 1250 mm wide and 2000 mm high with eight shelves, for bottled drinks and grab and go food that customers help themselves to.
Fitting Topaz into a cafe
- Counter run. Measure the whole run and allow for the espresso machine, grinder, register and a gap to walk through before choosing widths. The cake cabinets step up in 300 mm increments.
- Ventilation. An undercounter unit built into joinery needs a clear path for hot air to escape. Boxed in behind panels, it runs hot and the compressor wears out early. If a shopfitter is building the counter, send Sam the drawings so clearances are right before the joinery is made.
- Heat. Perth cafes get warm, with the coffee machine running all day and sun through the front windows. Keep the cake cabinet out of direct afternoon sun.
- Food safety. Cream cakes, sandwiches and salads must be kept at 5 °C or below. A cabinet packed too full or opened constantly during a rush will drift above that, so size it for your busiest hour.
- Power. Plan a separate outlet for each unit along the counter rather than relying on power boards.
Supply and install
Sam delivers each Topaz unit, moves it into position, levels it, plugs it in and checks it holds temperature before he goes. For a new fitout he can install the whole set in one visit once the counter is ready. Ask Sam about taking away the cabinets you are replacing. Topaz units can also be couriered if your shopfitter is doing the install.
Service and repairs
Cafe fridges work hard: doors open all day, half full milk jugs go back in warm, and coffee grounds and flour dust end up in the condenser. Sam services and repairs Topaz units across Perth for a $75 + GST call-out and $180 + GST an hour plus parts, with the price agreed before work starts.
