Fourteen uprights in three styles
The Williams upright range splits three ways. Nine are reach-in cabinets that staff load shelf by shelf: four Pearl, three Quartz Star and two Garnet models. Four are roll-in cabinets that take a loaded trolley straight in, one in the Garnet line and three in the Ruby line. The last is a meat ageing refrigerator.
Pearl and Quartz Star reach-ins
Pearl runs from the 520 L P1HC at 740 mm wide to the 1,510 L P3HC at 1,825 mm, with the 750 L PR2HC at 1,000 mm and the 950 L P2HC at 1,225 mm in between. Quartz Star offers 500 L, 900 L and 1,500 L at 740, 1,225 and 1,845 mm wide. Both lines stand 2,000 to 2,040 mm tall and 715 to 745 mm deep, with four shelves per door. The PR2HC is worth a look when a 1,225 mm cabinet is just too wide for the gap you have.
Garnet reach-ins
Garnet cabinets are deeper, at 824 mm, and that depth buys capacity. The single door G1 holds 610 L, which is 90 L more than the Pearl P1HC in a cabinet 13 mm narrower. The G2 holds 1,270 L in 1,400 mm. If the aisle in front can spare the extra depth, Garnet gives you the most storage per metre of wall.
Roll-in cabinets
A roll-in lets you wheel a full trolley of plated or prepped food from the bench into the cold without unloading it, which suits caterers, function centres and large kitchens. The Garnet Roll-in RG1 takes one 1/1 GN trolley in a cabinet 800 mm wide and 2,100 mm tall. The Ruby roll-ins take one, two or three 2/1 GN trolleys, measure 905, 1,850 and 2,795 mm wide, and are 982 mm deep and 2,370 mm tall. Williams supplies the Ruby cabinets as modular parts for assembly on site, so even the widest one can reach a kitchen through an ordinary doorway.
Meat ageing refrigerator
The MAR1 is a 620 L single door cabinet, 727 mm wide, 889 mm deep and 1,960 mm tall, with four shelves. It is made for ageing meat in a butcher shop or steak restaurant, away from general stock.
What to sort out before ordering
- Fridge or freezer. Several Williams uprights, Pearl, Garnet and Ruby among them, are built to order at either a refrigerator or a freezer temperature. Tell Sam which you need and check that the model code on the quote matches.
- Ceiling height. The reach-ins are 1,960 to 2,040 mm tall and the Ruby roll-ins 2,370 mm. Measure the ceiling where the unit will stand and leave space above it for warm air to escape.
- Floor in front. A hinged door needs clear floor about as wide as the door itself to open fully, and a roll-in also needs a straight, level run for the trolley.
- Heat. An upright beside a combi oven or a fryer bank runs harder all day. Sam will suggest a cooler spot if there is one.
Installation by Sam
Sam brings the cabinet in, sets it level so the doors seal evenly, checks the clearances around it and runs it down to temperature, then confirms it is holding before he leaves. Ruby roll-ins are assembled and sealed in place. Ask Sam about taking the old cabinet away when you get your quote. Williams uprights can also go by courier if you have your own installer.
Servicing and repairs
An upright that is opened dozens of times a service relies on clean condenser coils and sound door gaskets to keep up. Sam services and repairs Williams uprights. A visit costs $75 + GST to attend and $180 + GST an hour plus parts, and he agrees the price of the repair with you before starting.
