Chilled, heated or room temperature
This page covers four kinds of cabinet, and only one of them is a fridge. The 13 cake and chilled food displays are refrigerated and hold +1 to +5 degrees C, for cream cakes, slices, sandwiches and salads. The five hot food displays are heated cabinets that hold +50 to +70 degrees C for pies, sausage rolls and toasties. The two open hot displays are heated too, with a range of 30 to 85 degrees C. The four ambient food displays neither chill nor heat: their spec sheets list no temperature range and no refrigerant, and they draw less than half an amp for their LED lights. They suit bread, muffins, biscuits and packaged snacks, and they will not keep a cheesecake safe.
Matching sizes across the range
The four tier cabinets share one body: 740 mm deep and 1,360 mm tall, in widths of 660, 900, 1,200, 1,500 and 1,800 mm. Chilled and hot versions come in all five widths, and ambient versions in the four widths from 900 mm up. A cafe can therefore run a chilled, a hot and an ambient cabinet side by side along one counter at the same height and depth. Capacity goes from 300 L at 660 mm to 830 L at 1,800 mm. Three chilled models are taller and deeper, at 1,538 mm high and 990 mm deep, for more shelf space.
Points to check for each type
Chilled cake displays
The five FD4T cake displays list a 32 degrees C room rating, a 4 star GEMS rating and R290 refrigerant, with daily energy use from 9.4 kWh (660 mm) to 21.23 kWh (1,800 mm). All 13 chilled models run on a standard 10 A plug and have double glazed glass. The 660 mm cake display has a single hinged door, and the wider cake displays use two sliding doors. Set the controller so the warmest shelf stays at 5 degrees C or below, the FSANZ limit for chilled food.
Hot food displays
Four of the five hot food displays come with a 15 A plug, and only the 660 mm model uses a standard 10 A plug. A 15 A plug will not fit an ordinary power point, so an electrician needs to fit a 15 A outlet before installation day. Food safety rules require hot food to be held at 60 degrees C or above, so run the cabinet in the upper part of its range and probe the food itself, not just the air in the display.
Open hot displays
The two open hot displays are a 1,000 mm full height model (2,000 mm tall, 500 L) and a 900 mm semi vertical model (1,360 mm tall, 290 L). Their spec sheets list a 32 A round pin plug for the full height unit and a 20 A round pin plug for the semi vertical, drawing 18.75 A and 14.5 A. Both need a dedicated circuit and a matching outlet installed by an electrician.
Ambient displays and accessories
Ambient cabinets draw between 0.2 A and 0.49 A on a 10 A plug, so power is rarely a concern. Nineteen accessories fit the FD4T cabinets: four LED warm light sets, plus top, middle and bottom wire shelves sized to each width.
Supply, installation and service
Sam quotes the cabinet with delivery and installation across Perth. He positions and levels it, checks the outlet matches the plug, and runs a chilled display down to temperature, or a heated one up to temperature, before he leaves. Ask Sam if you would like the old cabinet taken away. Cabinets can also be sent by courier. For servicing and repairs on chilled displays, see commercial fridge repairs and maintenance plans, or return to the Bromic refrigeration page for the full range.
